The Ritz-Carlton, Laguna Niguel welcomes locals and visitors alike to soak up the summer sun and take in expansive views of the Pacific Ocean with the debut of new seasonal culinary offerings. Debuting early for the holiday week on Wednesday, July 3rd, guests can now enjoy morning specialties with the launch of The Breakfast Cart at 180blu, featuring 180-degree views of the ocean, made-to-order breakfast burritos, burrito bowls, and more. For added dining pleasure, the intimate steakhouse enoSTEAK and Pan-Latin coastal dining destination RAYA roll out new summer menus highlighting the season’s bounty. Guests can continue to savor summer at180blu, watching a stunning sunset while enjoying fresh hand-rolled sushi and sake pairings.

The Breakfast Cart at 180blu

Available Saturday and Sunday from 8 a.m. to noon, the resort’s culinary team are excited to debut The Breakfast Cart at 180blu, featuring California-style morning specialties paired with stunning views of the Pacific Ocean. Perfect for guests seeking a casual, yet delicious breakfast, The Breakfast Cart offers made-to-order burritos, burrito bowls, parfaits, signature doughnuts, and more. Menu highlights include the Monarch Burrito with chicken sausage, scrambled egg, breakfast potato, black bean, roasted green chile, three cheese blend, and pico de gallo; Mexi-Cali Burrito with red chile braised skirt steak, scrambled egg, three cheese blend, breakfast potato, black bean, and pico de gallo; and Bionico, a Mexican-inspired fruit salad with coconut cream, macadamia nut, toasted coconut, mint and agave. The Breakfast Cart is located at 180blu, the resort’s outdoor cocktail lounge, and available Wednesday July 3rd – Sunday, July 7th, followed by every Saturday and Sunday until Labor Day weekend. Seating is first come, first serve.

New Summer Menus at enoSTEAK & RAYA

Celebrating summer’s seasonal ingredients, guests can indulge in new dinner selections at enoSTEAK, including Stone Fruit Salad with kiwi, goat cheese mascarpone whip, pistachio, mint and watercress; Tuna Carpaccio Nicoise with olive aioli, cured yolk, mustard frill, red onion, shaved asparagus and crouton; and Butter Basted Scallops with green lentils, pistou, charred baby fennel and tomato vinaigrette. At RAYA, guests can take in views of Salt Creek Beach while enjoying new lunch and dinner options, such as Strawberry Tomato Salad with burrata, red mustard frill, croutons and 5 spice vinaigrette;Garlic Noodles with yu choy, carrot, oyster sauce, sesame and togarashi-soy; and Grilled Prime Filet with crab mashed potatoes, pickled onion, chipotle hollandaise and truffle chimichurri. Sunset Sushi and Sake

Back by popular demand, sunset sushi and sake are available at 180blu now until Labor Day weekend Thursday through Saturday from 5 to 8 p.m. While watching the sunset over the ocean and listening to live music, a fresh selection of handmade rolls, sushi, and sashimi are prepared by the resort’s dedicated sushi chef. Selections vary with the season but staples include Blue Fin Tuna, Hamachi, Scottish salmon, Kinmedai (Alfonsino), Hirame (Flounder), Tai (Snapper), Toro (Fatty Tuna), Hokkaido (Scallops), and more, paired with Nishiki rice for premium flavor. A unique selection of chilled sake complements the sushi, including Takatenjin, Soul of the Snesei, Junmai Daijinjo; Rihaku, Wandering Poet, Junmai Ginjo; and Kanbara, Bride of Fox, Junmai Ginjo. Seating is first come, first serve.
