Sushi Roku is ready to greet Spring with a new Vegan Omakase offering. Guests will now have an opportunity to experience Vegan Nigiri, Rolls and vibrant plant-based dishes!
The Vegan Omakase consists of the following four courses:
– Organic Kale Salad – King Oyster Mushroom, Crispy Shiitake and Ginger Plum Vinaigrette
– Santen Mori – a Trio of Appetizers with Roasted Cauliflower, Miso Eggplant and Grilled Corn
– Choice of Entrée
Tofu Steak with Mixed Mushroom Tobonyaki – Tofu with Shiitake, Oyster and Enoki Mushrooms in a Gluten-Free Citrus Ponzu Sauce, garnished with Fried Shishito Peppers and Green Onions
4-Piece Vegan Nigiri and the Vegan Roll – Pickled Napa Cabbage with Shiso and Lemon Zest; Strawberry Ceviche wrapped in Daikon; Cauliflower Salad wrapped in Daikon; Yuzu Guacamole topped with Wasabi Root and Rice Crackers wrapped in Cucumber; and Vegan Roll with grilled Eryngii and Asparagus, Jalapeno, Butter Lettuce, Soy Paper and Almond Sauce
Grilled Avocado with Ponzu – seasoned with Yuzu Soy, Togarashi and Sesame Seeds, garnished with Scallion and Lemon
– Avocado Vegan Chocolate Mousse – Vegan Filo Cup
The Vegan Omakase is available for Lunch & Dinner for $40 per guest.
