Anaperitif refreshment enjoyed in afternoon daylight to dusk, the anise-flavored liqueur known as ‘the milk of Marseilles’ is an integral part of French culture and imbibing. Guests can enjoy this libation four ways:
l’original (the original) – Ricard, chilled water
le perroquet (the parakeet) – Ricard, mint, chilled water
la tomate (the tomato) – Ricard, grenadine, chilled water
la mauresque (the Moorish) – Ricard, orgeat, chilled water
The experience is as French as the macaron. Carve out an hour or two and a corner in Alcove’s shaded brick patio. Pastis service arrives – a highball glass one-part Ricard pastis, a carafe of ice-cold water, and a yellow striped straw. The chilled water is poured, and the once translucent caramel-colored liqueur becomes a cloud of yellow pastel.
Sip, dilute, relax, repeat.
