Memorial Tribute to Brian Hirsty, Executive Chef at Bluewater Grill

Brian Hirsty, Executive Chef at Bluewater Grill for the past 18 years, passed away on March 10, 2014, after battling a rare bone marrow disease. He is survived by his wife Amy, son Dylan, daughter Chelsi.

At the age of 7 Brian discovered his true calling as he grew up along the Southern California coast. He would wake up before dawn so he could watch the local fisherman as they brought in the early morning catch. By nine, Brian was cooking these fish after he studied the Joy of Cooking.

In 1996, after graduating high school and training with several hotel kitchens, Brian arrived at Bluewater Grill to open the first location in Newport Beach. Overtime Brian also was given the role of opening eight Bluewater restaurants in California and Arizona.

Even with his role as an Executive Chef, Brian never forgot where his passion started. He could be found on the docks to receive fresh fish and keeping one-on-one relationships with the local fisherman. The joy he had creating original seafood dishes helped countless customers discover the love of seafood. This kept regulars coming back eager to try his latest dish.
