Rasta Taco plans to open a new brick and mortar restaurant and is excited to announce that Wing Lam of Wahoo’s Fish Taco will be adviser to the new expansion from taco catering to restaurant.
Wing Lam, of Wahoo’s Fish Taco, is co-founder of the surf-inspired fast casual taco chain that just celebrated its 25th year in business, and now boasts 67 restaurants across the country.
Like Lam, Rasta Taco’s founder Melendez, also grew up in Orange County and is influenced by the surf culture. His idea for an on-site taco catering company was born on a trip to Jamaica in 2006 when Melendez noticed roadside grilled chicken stands without tortillas. The name and concept was born there, and upon return, business commenced.
