The Urban Kitchen Group announces the appointment of Lauren De Rouen aschef de cuisine of CUCINA enoteca, the newest concept from celebrated restaurateur Tracy Borkum.De Rouen brings more than 10 years of culinary experience to CUCINA enoteca, having previouslyserved as executive chef at of both Leatherby’s Cafe Rouge and Pinot Provence in Orange County. Most recently, she opened Fig & Olive restaurant group’s first west coast location on Melrose Place. DeRouen has worked alongside some of the top European chefs while living in Provence, France and SanSebastian, Spain and apprenticed for Team California at the Culinary Olympics in Erfurt, Germany.Set to open its doors at the Irvine Spectrum Center in December 2011, CUCINA enoteca will featureItalian-inspired California cuisine and will be one of Orange County’s only combined restaurant andretail wine shop concepts.
