Europa Village, Temecula Valley Wine Country’s multi-winery resort, today announced the opening of its newest addition—Bolero, on Friday, June 12. The lively Spanish winery is a full-bodied experience—vibrant with rich colors, bold flavors, and an air of spontaneity. Bolero is a place created for the young and the young at heart and complements Europa Village’s timeless collection of French and Italian villages—capturing the romance and the ambiance of Europe, in Temecula’s Wine Country—and placing the carefully crafted vision for the resort one step closer to full completion.

Bolero offers a total Spanish immersion for guests and visitors. Indulge in tapas and microbrews at Bolero Restaurante, delight in the luscious flavors of Bolero wines throughout the village, and savor the experience at Brio, a Spanish boutique offering olive oil tastings and special mementos. Step into old-world Spain and revel in a backdrop of cypress and olive trees, fountains and wrought iron, and breathe in the rich smells of leather and wood. Enjoy a special event set to the tune of a flamenco guitar among the vines, or in the gorgeous Italian wine cave, which will be available for wedding ceremonies and event bookings later this summer.

Bolero Restaurante, from the creative mind of Europa Village Director of Food & Beverage David Townsend, takes guests on a culinary journey throughout the country of Spain. The vineyard-facing, outdoor-indoor restaurant features abundant outdoor seating with some of the most stunning views in Temecula Valley. From the humble farm-to-table cuisines of Asturia to the majesty of modern culinary interpretations coming from San Sebastian or Barcelona, the restaurant’s breakfast, lunch, and dinner menus celebrate the centuries-old tradition of dining and drinking together with Tapas-style dishes. The diner menu spotlights dishes including traditional Iberico Ham produced exclusively from a specific breed of Black Pigs native to the Iberian Peninsula, and a selection of curated seafood dishes including roasted boneless whole red snapper and grilled octopus salad, as well as signature dishes such as grilled Bolero-style Piedmontese flat iron steak; “Fabada el Cuenco” with Andalusian stewed pork & beans with Bilbao chorizo, Serrano Jamon, and faba beans; a curated menu of made-to-order Paellas and a decadent dessert list. Bolero Restaurante’s wine list celebrates the resort and winery’s entire portfolio of wines and the greatest wines being produced in Spain—offering the opportunity to taste new grape varietals, realize new textures, aromas and discover new favorites—from the most delicate expressions of white wines to the heartiest full-bodied red wines.

The casitas at Bolero, now taking online reservations for stays commencing July 1, offer unique accommodations that transport guests the moment they check-in for a Wine Country escape, and are all complete with luxurious vaulted ceilings, generously sized baths with walk-in showers (some with opulent soaking tubs) and private courtyards complete with outdoor furnishings and seating space, giving guests a little piece of Spanish paradise to call their very own.

Located in the heart of Bolero lies Brio, a boutique of exclusive treasures that speak to the Europa Village experience. Hand-selected home goods and designer accessories line the shelves, while others are filled with delectable olive oils, wines, tapenades, and more—allowing guests to bring the tastes of Europa home, in addition to quick snacks and various sundries.
