Bruxie, the fast-casual, gourmet waffle restaurant with roots in Southern California, has announced that it will open its first Colorado location on Tuesday, March 25, 2014, on 1000 S. Colorado Blvd. Bruxie’s next generation Sandwiches use a light, airy version of an authentic Belgian Waffle as the sandwich fold. The waffle is crisp and not sweet – reminiscent of freshly baked bread.
Bruxie Waffles are filled with quality seasonal ingredients, fresh produce, and hand-made sauces and accompaniments. Waffle sandwiches include the Buttermilk Fried Red Bird Chicken Breast with chili honey and cider slaw, the Bruxie Burger made from Aspen Ridge beef, the Prosciutto di Parma and Gruyere, and the Roasted Mushroom and Haystack Mountain Goat Cheese. In addition to these savory selections, the menu features a number of sweet sandwiches including fresh Strawberry Crème Brulee, Nutella & Banana, Belgian Chocolate Ganache S’mores, and PB&J with Plum Daisy Kitchen preserves from the Western Slope. Bruxie will also feature a number of chef-driven and seasonal daily specials.
In addition to its varied sandwich menu, Bruxie offers a selection of freshly tossed salads; Artisanal, Old-fashioned Cane Sugar sodas, and Real Wisconsin Frozen Custard. The custard is hand spun into more than a dozen house-recipe Shakes and Floats.
It took Chef/Founders Dean Simon and Kelly Mullarney years to evolve and perfect their waffle recipe, and carefully select the ingredients and fillings that best complement them. “Shortly after opening our first location in 2010, we realized that Bruxie struck a chord with diners, who craved a menu of bold, flavorful combinations made with quality ingredients,” says Dean. “I see Denver as one of the most food-centric cities in the country, and hope our chef-driven concept will achieve the same enthusiastic following we experience in Southern California. We believe we have created something noteworthy and hope the people of Denver will agree.”
Bruxie will serve Breakfast, Lunch, Dinner, and Dessert seven days a week. Bruxie recently developed and proudly serves The Bold Blend, its own custom crafted coffee made from a proprietary blend of 100% fair-trade beans. Chef/Founder Kelly Mullarney personally developed this blend as the foundation for Bruxie’s wide range of barista-crafted coffee and espresso drinks. “I really wanted to create a coffee that would complement our full flavored selection of breakfast sandwiches, as well as stand alone as a rich and satisfying coffee experience.”
Bruxie is set to open on Tuesday, March 25, 2014 and will be located at 1000 S. Colorado Blvd, Glendale, CO 80246.
